Eggplant Parmigiana

Well, tonight we decided to get creative. There's an Italian joint here in Atlanta by the name of Scalini's that claims to have an Eggplant Parmigiana dish that's so good it literally induces pregnant women. Given the fact that Hadley is 100% ready for Baby Sloane to make her grand appearance, you can imagine she wanted to give it a try. Furthermore, since our days as a couple are numbered, we thought it would be a great way to celebrate those last days. With family and friends stopping by as we come down the home stretch, we figured this would be our last chance to have a quiet, romantic night to ourselves. As you all well know, once Baby Sloane arrives, we are no longer a couple....we are a FAMILY!
